Apple Oatmeal

It's apple picking time!!

I have such fond memories from when I was younger of going apple picking with my friends and family. Each autumn I look forward to driving a ways out of the city and wandering an orchard to fill up bushels with Cortlands and Honeycrisps. But what to do with all that fruit once back home? ln addition to pies, and crisps, and applesauce I love to add my apples into some morning (or anytime) oats!



This is a super easy and very tasty apple cinnamon oatmeal recipe.

 

In a small saucepan combine diced apples, maple syrup, and cinnamon and sauté for a few minutes until apples are soft. Measure with your heart. Set aside

 

Add oats, milk or water, maple syrup, cinnamon, vanilla, and a pinch of salt to a saucepan over medium-high heat. Bring mixture to a low boil, reduce heat to a low simmer and continue to cook for about 5-7 minutes; stirring occasionally. Oatmeal is ready when the oats have soaked up most of the liquid and are creamy.

 

Serve in a bowl and mix in the cooked cinnamon apples. Optionally, top the oatmeal with a dusting of cinnamon, chopped pecans, peanut butter, cream, or any additional sweetener.

 

Warm hardy breakfasts enrich the body and mind. I find myself feeling more grounded and awake, prepared to take on my day when I start it with this favorite autumn meal.
